Which persons change e>i in the indefinido?

Only the third persons: pidió and pidieron. The rest keep the e: pedí, pediste, pedimos, pedisteis.

Which verbs follow this pattern?

-ir verbs with an e in the stem: pedir, servir, repetir, seguir, sentir, preferir, divertirse, vestirse or medir.

Do o>u verbs work the same way?
